I’m sure you’ve had those little pudding cups that they sell at the grocery store, they’re so tasty and perfectly proportioned, so I thought it was time I recreated them at home. I picked up these cute little glass mason jars at my local craft store and whipped up a big batch of my favorite chocolate vanilla, and let’s just say mine are healthier and taste better!

Pudding:
2 avocados, pitted and insides scooped out
1/3 cup coconut milk
2/3 cup maple syrup
2 Tbsp. almond butter
1 dash sea salt
1 tsp. vanilla bean powder
1/3 cup cacao powder


Topping:
Gluten free chocolate cereal or cookies, crushed up (optional)

Directions:
Blend all of the ingredients for the pudding in a high speed blender, blend until smooth. Spoon the pudding into the jars and then top with crushed cookies or cereal. Place in the refrigerator to cool or eat at room temperature.
