This is what I like to call a no-recipe recipe. It’s just a festive way to serve the classic healthy snack Hummus and vegetables. It’s perfect for fall, however I don’t see why you couldn’t make this year round, maybe just leave off the pumpkin stem!

Ingredients:

1 pumpkin or a large orange bell pepper
1 container hummus (or homemade)
1 cucumber
1 package baby carrots
1 package sweet pepper

Directions:

Cut off stem of bell pepper and set aside. The Lay pepper on its side and cut a slice off of the bottom of the pepper making it easy to dip into (the bottom of the pepper is going to be the top). Place the pepper up right, up side up and remove seeds from the inside. Add hummus to pepper, chop cucumbers and serve with carrots and sweet peppers. Feel free to serve with crackers or any other vegetables you like.
