During the winter I find it a little harder to eat salads, however it’s still really important to make sure you are getting in raw vegetables. Raw vegetables are full of great nutrients, vitamins and enzymes that cooked foods lack. One way I make sure I’m eating salads this time of year is I load them up with my favorite things, like this one has pomegranate seeds, which I absolutely love!

Add these antioxidants to your diet

Ingredients:

Salad
1 head or lettuce, chopped
1 pomegranate, seeds only
1 bell pepper, chopped
¼ cup red onion, chopped
1 tomato, chopped
¼ cup mint leaves, chopped

Dressing
1/4 cup tahini
1 tablespoon chickpea miso
1 tablespoon lemon juice
1 tsp. sugar
1/4 cup or more warm water
Salt and pepper to taste

Directions:
Place all salad ingredients in a large bowl and stir well. Mix together dressing ingredients together in a small glass bowl. Serve salad with a little dressing. Store leftovers in the refrigerator but keep salad and dressing apart until ready to serve.
