Chocolate Chip Pumpkin Bars

Chocolate Chips and Pumpkin go so well together and I thought it was time to try something other than cookies and muffins. These bars are similar to blondies or oat bars but with a fun seasonal twist. Feel free to put your own spin on them by adding chopped nuts or dried fruit.

Ingredients:

1 flax egg: (1 tablespoon ground flax mixed with 3 tablespoons water)
1/2 cup unsweetened canned pumpkin purée
½ cup brown sugar
2 Tbsp. maple syrup
1 tsp. pure vanilla extract
1/2 tsp. baking soda
1 1/2 teaspoons cinnamon
1 tsp. pumpkin pie spice
3/4 brown rice flour
3/4 cup almond flour
1 Tbsp. arrowroot
¼ cup mini chocolate chips

Directions:

  • Preheat oven to 350 degrees, line an 8-inch square pan with parchment paper.
  • Mix flax egg in a small bowl and set aside.
  • In a large bowl, mix the pumpkin and sugar then add the flax and vanilla and mix some more.
  • Add the baking soda, and remaining spice, stir again.

Finally add the remaining ingredients and stir well. Spoon the batter into the pan and use a spoon to make sure mixture is even, feel free to add more chocolate chips on top. Bake for 20 minutes and allow to cool completely before slicing as they will crumble if you do.
